Gyuto (210mm) 115CrV3This San ma Gyuto feature a thin blade, good distal taper and nimble tip. It give to this blade a good balance near the heel. Confortable pinch grip with the polished spine and choil as well as the 16x19mm Emoto. The Black walnut Wa handle with extra long ferrule compliment the blade. The 135Cr3 core steel is one of my favorite steel. It's a low alloyed, high carbon (1. 35%) steel commonly used for it's strength, reliability and hardness. Blade
